This simple Paté is wonderful on salads, lettuce wraps or as a vegetable dip. Of course it is perfect for Tacos as well! I created it after missing Mexican food for much too long.

Ingredients
2 cups raw Almonds
1 Red pepper chopped
1/2 Onion chopped
1 Tsp. Cumin seasoning
Fresh Lemon and Cilantro if desired
Recipe Directions
1. Soak the almonds overnight.
2. Strain the almonds
3. Put all ingredients in a food processor or blender and process until almost smooth.
Will keep in the refrigerator for 5 days.

Taco Paté
This was amazing! I made a few modifications...I omitted the bell pepper simply because I didnt have any on hand and I used a whole (large onion) and 1 garlic clove with the other spices. This made it quite spicy! I pulsed this in the food processor just until incorporation. I served the pate over thinly sliced romaine mixed with cilantro and tomatoes and then garnished with fresh salsa.
It was amazing! I think next time I will use large romaine leaves as a taco shell and go that route to experiment a bit! Thanks for posting this, awesome stuff!

we made this last night and it was great, though we did alter the recipe a bit...
we added:
-2 cloves garlic
-more cumin
-a little paprika
-more onion
we ate it with chopped tomatoes on romaine leaves...it seriously tasted like straight up TACOS! YUMMM
