1. Puree the banana with a blender. Put in a bowl and mix with the rest of the ingredients.

2. Use a spoon to shape and smooth the batter into a pancake. (The batter will be pretty stiff and keep in the fridge for several days.)

3. Serve topped with fruit and a drizzle of agave nectar. (I like to mix sliced strawberries in a bowl with a bit of agave nectar and let it sit for about ten minutes, which brings out the natural sweet juices of the fruit.)

about 4 hours, but i let the others sit in for about 6-7 hours and they were even better! num num num

I live in the Cayman Islands and have very basic (but very cool!) deyhadrator gig going, so dehyrated mine for 6 hours. I love these cookies and keep a batch around at all times now. I have used sunflowers seeds too. Yummo! I was a short on flax and used a little raw coconut flour for one batch-this rocks too. By the way, your blog is totally awesome!

I just made these, doubled the ingredients, and they will be cookies tomorrow since I’ll dehydrate them overnight. I also added raisins and a handful of chopped walnuts to the mix... let’s see what happens. I might drizzle agave nectar on them or make the raw chocolate sauce... or I might whip up a raw peaches sauce or nectarines and call them jelly pan-cookies?! ?

oh my god! i've made this at least five times and they've been so delicious! Sometimes I forget the cinnamon, because that's just me, but they're still yummy! favorite raw breakfast. :)

Yum! Made this for breakfast (super fast) and loved it with strawberries and blueberries! My Dad thought it needed something else, too dense for him even for a pancake.

Anything other than water that could be used to light it up?

Ever since I found this recipe, I have made these pancakes every Sunday morning topped with raspberries and kiwis and a touch of agave. My kids just love them! I love how they are so quick and don't need to be dehydrated.

If you just wait till the inside is soft and the outside is firm....its like a warm oatmeal cookie biscuit thing... mmmmmmmmmmmmmmmmmmmmmmmmmmmm

the pancakes weren't as firm as i would of liked them, and i would prefer it warm so i made thicker patties and put them in the dehydrator.

instead of date paste i put raisens and blended it with the banana along with only 1/2 Tbs of coconut oil.

I also added a little vanilla extract. cant wait for dinner time :D

i did try the finished product before putting it in the dehydrator and its soooooooooo good.
