Ingredients
10 Carrots,, juiced
1 lemon, cut off rind, juiced
1 2 inch knob ginger, peeled, juiced
½ teaspoon himalayan sea salt
1 teaspoon Thai Spice
1 teaspoon light miso,, optional
1 tablespoon coconut butter
½ avocado
3 tablespoon olive oil
Recipe Directions
Juice Carrots, lemon, and ginger. Place into blender, and add remaining ingredients and blend until creamy and smooth. Garnish with cilantro or lemon thyme. You can serve this warmed up or room temperature.

By kiwiThis was easy and quick to prepare and it tastes devine. Please check that the thai seasoning mix you buy doesn’t have shrimp in it, as some brands do. The frontier brand from Whole Foods is shrimp free..

Just made this right now for dinner for my husband and I and we loved it! Delicious, creamy, and with just the right balance of flavors. I left out the thai spices for my husband b/c it affects his psoraisis, but he said it was still excellent.
