Ingredients
2 cup raw cashews, soaked 6 hours
½ yellow pepper, chopped
½ green bell pepper, chopped
1 lime, juiced
2 green onions, chopped
1 tablespoon fresh cilantro, chopped
Braggs Amino Acids, to taste
chili pepper, to taste
½ sweet red peper, chopped
Recipe Directions
Soak cashews six hours or overnight, then rinse and drain. Add chopped red, yellow and green peppers, green onions and either dried or chopped fresh chili pepper (without the seeds for a milder salad to taste). Finish with fresh squeezed lime juice, Braggs Aminos (or Shoyu) and chopped fresh cilantro.

A bed of spinach or other greens would be great.

This looks good but I may have to add some spinach as I don't want too many nuts.Maybe scoopit over a bed of baby spinach???

This was soooo excellent and fresh.
I did add a little bit of crisp red apple to cut down on the nuts.

I loved it. I used sea salt instead of Braggs and added a little olive oil and I LOVED it, thank you!

This was awesome. I only soaked the cashews for 2.5 hours because i wanted the cashews to have some crunch and I used soy sauce instead of Braggs. This as an awesome use of cashews and peppers.

This is so creative, I wouldn't have thought to soak the cashews, but it probably makes them almost like a bean texture, which I miss. It's all my favorite flavors!
