The broccoli

Rub the broccoli florets with a bit of olive oil, lemon juice and salt like marinade. This will help to soften the broccoli a bit, making the eating and digesting of it that much more pleasant. Put the broccoli aside to sit in the marinade for at least 1 hour. I often wait till I'm hungry to make food, so the last time I made this it sat for only 45 min, and was quite perfect. It was the first time I had eaten raw broccoli in such a large quantity so I was a bit nervous as to how it would go. Had no problems (luckily as I went out afterward). If, however, you're not used to eating raw I would start with this as a side dish.

Blend everything together or whisk it together in a bowl. Pour over your marinated broccoli, mix well and enjoy!

I made this tonight but it didn't taste like cheese :( more like peanut butter :/ but then I put more nama to make like a peanut sauce. I dumped tons of nutri yeast also but still no cheesiness.

@ eloisa: try substituting half (or more) of the tahini with soaked cashews instead. You can also add a handful of grape tomatoes or half a red pepper. Both taste fantastic and add a nice cheesy orange tint to the sauce

ps. glad I saw your comment...I took my own suggestion the first time I made it because I don't like stuff to taste too much like tahini or peanutty. I think next time I will use only half a table spoon-ish of tahini and the rest cashews

if your tahini is roasted, it will taste like peanut butter. raw tahini doesnt taste like peanut butter at all. also, i think this recipie is better if you but the broccoli in a food proccessor and break it down to "rice" size, making it more like a broccoli risotto. just saying.

I used the cashews as well and had to add garlic (because I just love garlic). Also, a bit more nutritional yeast for the more cheesy flavor and it was a great hit! Pretty tasty!!
