A delicious sun dried tomato pesto. I like to eat in on Mauk wheat free crust or put it in my salads.

Ingredients
32 ounce Sun Dried Tomatoes
1 cup Olive oil
4 clove Garlic
1 Lemon
3 cup Cashews
1 Tomato
Recipe Directions
- Place sun dried tomatoes in food processor
- Add enough oil to drench sun dried tomatoes
- Mix together in food processor
- Let mixture sit for 20 min
- Mix in cashews in food processor until smooth
- Add lemon juice and garlic

I made this, and I must say it is hands down the best sauce I've had ever!!
I didn't have 32 oz of sun dried tomatoes, so I kind of guesstimated the other ingredients. But it was so amazing! I've been using it for raw pasta, veggie rolls annd just as a spread. It will definitely become a staple at my house.
