This is one of my favorite salads to date. I think the flavors compliment each other well and the dressing is a surprising flavor. The original recipe calls for 1/8 tsp salt and pepper.

Scatter orange slices and cucumbers on a platter.

Is the dressing for more than one salad? I'm assuming it is, b/c that seems like a lot of olive oil for one serving. Thanks!

This is great. I love this. I was a bit shocked at the amount of oil (1 cup), so I started with less. I made my dressing in a mini chopper, if you did it in a blender you would need that much oil to get the blender going. We will have this again. Oh I added a pinch of cayanne pepper to warm it up.

Yes, there is more dressing than the cucumber and orange salad would need. Haha you don't want to engulf the cucumber and orange with the dressing, that would be gross. You could add more cucumber and orange, or use the dressing for another salad. Either way. :0)
