Serves 4 (maybe more)
Ingredients
Nut Paste
1¾ cup Almonds (soaked)
¾ cup Cashews (soaked)
1 clove Garlic
6 Olives, de-pitted
½ Red Pepper, Chopped
Parsley to taste
Sea Salt to taste
dash Olive Oil or flax oil
Stuff to be Stuffed
4 Tomatoes
7 Mushrooms
Recipe Directions
Process cashews and almonds til almost creamy then add the rest of the ingredients adjusting the flavors to your taste and adding water for desired consistency
Scoop out tomatoes (save for another recipe;) De stem Mushrooms
Stuff veggies with Care and LoVe
Enjoy!
You can use leftovers for spreads or in salads, if you like..
I used Tomatoes and Mushrooms….I found the tomatoes were reeeeealllllllly yummy! You can also try stuffing peppers or other veggie favs.

I'm soaking my nuts now! Hey, if you pit the olives, how do you de-pit them? You can't unpit them, because they start out unpitted ;)
One of my favorite yummy stuffing vessels is a cucumber boat (sliced lengthwise then seeds scraped out with a spoon).
