3 dates (soaked for a few hours)
½ teaspoon vanilla extract
A little bit of water

1. In a food processor or blender, blend all ingredients together.
2. Then freeze.

I bet if we added a dab of beet juice, it would be more red. DH is use to that commercial stuff. Thanks for the recipe!!

This reminds me of when I used to make a strawberry cashew ice cream with mint. I think I should do that again when I restock on cashews.

One more question... when you say a box of strawberries, do you mean a pint of fresh strawberries (the little square basket) or a quart (the big rectangle basket? Thanks!

no, i don't have an ice cream maker. you can pour it straight from the blender into a bowl and just freeze that for really little (maybe an hr?), if not it gets really hard...didn't have to stir it. ice cream makers seem cool, i kinda want one too

andieOO7 - looks lovely! did you use an ice cream maker? If not, did you have to stir it a few times in the freezer? I was going to buy and ice cream maker this summer but will probably do so next spring/summer.

ah good idea :), i wanted it to be much darker but no matter how many strawberries i added, it stayed pale
