Recipe Directions

1. Mash dates, vanilla seeds, and pineapple together by hand.

2. Chop almonds. Add sea salt to them and roll into balls. If they stick to your hands too much, get your hands a little wet.

3. Roll in coconut, and they’re done!

rawmama, mine were really gooey but probably because i soaked my dried pineapple so it would process more easily. i don't think they actually taste like donut holes, but still a really good little sweet treat. i didn't dehyrdate mine - left them all gooey.

In what form is the dried pineapple measured? It's a little vague as-is - the stuff I bought is in discs.

I tried these this morning. My stuff turned out very dry and the coconut wouldn't stick to it. Rather than throw it out (it smells wonderful!) I added a mashed banana to the "dough", rolled the balls into coconut, mashed them down a bit (so they resemble little biscuits) and placed them on a dehydrator. They taste good as is but the dehydrator will make them stick together a bit better. I'm taking them to the office tomorrow (if they last that long).

So yeah, i´ve made these twice now and I LOVE them. As raw almonds are pretty expensive and I doubled the recipe I used a combination of raw almonds, hazelnuts, sunflower seeds, pumpkin seeds and hazelnuts. So don´t be afraid to try them with other nuts/seeds. Also because organic dried pineapple was ridiculously expensive, I dried my own YAY and it was wonderful- I also ran out of dates and substituted about 1/4 with raisins. Although Istorz and MYnutritionist- you have to try these WITH pineapple or it´s not the same! Delectable yummies!

I have Paul's book. There are parts that I agree with and areas that I don't. Whether I agree or not does not change the facts. It's a good book, thanks. I've used raw food as my medicine for the last 3+ years. I can testify that raw food makes a difference in having good or bad health.

Raw vanilla is a long "bean". It's full of tiny seeds. Scraping means to remove the seeds by literally scraping them out.

I had everything but the pineapple, so added raisins and it was great, thanks! A book you might want to consider is Paul Pitchford Healing with Whole Foods, Asian Traditions and Modern Nutrition.

I liked these a lot -- I used raisins instead of pineapple, and they tasted great -- not too sweet but very satisfying. Mine definitely didn't taste like donuts, but that was fine by me.

We made these and the only donut holes we think they taste like are those cheap little coconut ones you buy in gas stations (pre-packaged)??? I actually liked it best when I only had a little of the almonds rolled into it and some of the coconut, more gooey :) Am I supposed to dehydrate these?

My husband loved these too! I highly recommend her book. I have tried several of her cheeses and her sunflower bread. Great stuff and easy to prepare!

wow! this is our first raw food experience (well at least preparing it) my husband leo couldn't keep his hands off of them! Yummy! : )
