Ingredients

1 slice onion bread
2 tablespoons pate or spread of choice
1 medium tomato (sliced 1/4-inch thick)
½ avocado (sliced 1/4-inch thick)
Lime
Cilantro (for garnish)
Salt and pepper (to taste)

Recipe Directions

1. Squeeze the lime over the tomato and avocado slices. Then sprinkle with salt and pepper.

2. Spread the pate thickly on the bread. Then pile on the tomato and avocado.

3. Place some cilantro leaves on top for garnish.

This is a knife-and-fork-worthy, open-faced sandwich piled high with fresh veggies, a la Dagwood Bumstead from the comics.

Anyway, this was my lunch today and it was the first thing I made with that awesome onion bread recipe!

This is a really easy lunch when you already have the bread and the pate on hand.

OMG that picture is amazing! I am definitely making this one this weekend. I even have a batch of "raw hummus":http://www.therawtarian.com/community/recipe/zucchini-ratatouille on hand! Thanks for the inspiration.
