Yield
Good sized lunch soup or smoothie for one.
Ingredients
½ English cucumber, whole
1 celery with leaves
½ avocado
1 scallion
1 clove garlic, peeled
1 handful of dill, stems 'n all
1 handsful of parsley, stems 'n all
a few mint leaves
salt and pepper to taste
1 teaspoon tamarind paste or date (OPTIONAL)
2 cup water, or to desired smoothness
Recipe Directions
Vitamix it all up til smooth and enjoy.
P.S. Unlike some of the other raw soups and smoothies, this tastes great a few hours later. The texture doesn’t change.

By Hippie ChickIs it a smoothie or a soup? I don’t know, but I am downing it like it’s made of gold. It takes one minute…no chopping necessary. Don’t worry about measurements. Just add stuff to taste. Strangely, it is perfect for both hot and cold weather, when you are in the mood for Greek Food, etc. It just takes a minute so give it a whirl!
