This simple raw vegan curry sauce tastes like traditional yellow curry sauce that you'll find at your favorite Indian restaurant. This recipe isn't hotly spiced at all, but it does have that nice warm yellow curry flavor.

How did I do it? Easy! Curry is simple: it's creamy, sweet and curried :)

This recipe keeps very well in a tightly-sealed container in the fridge for up to 3 days. It also doubles as a lovely vegetable dip, particularly tasty with broccoli and cherry tomatoes.

Hi Brooke,

The cashews provide the creaminess in this recipe. If you can't do nuts, then it will be difficult for you to make this recipe.

Some ideas for other ways to get creaminess in raw recipes: avocado, coconut milk. However, I am not suggesting that you use either of these as substitutions in this recipe.

Best to look for another recipe :)

Mm-mmm-mmmm... sooooo yummy!!! I added 1/8 fresh red bell pepper, a pinch of: turmeric, ginger powder, cayenne powder, cumin powder -- and used honey instead of maple syrup... I also added minced fresh garlic to the zoodles and more chopped red bell pepper. It was perfectly mild sweet and spicy. Saved the sauce for second portion tomorrow (practicing mindful eating). Had an apple-berry smoothie as the second course. Bravo, Laura-Jane! You've wowed me yet again ?

This raw curry sauce is so yummy and flexible!
I’ve made it with zoodles and here with cauliflower rice and vegetables. Very quick and easy. I added olives, capsicum, grated carrot, avocado, peas and corn.

Wow! Good sauce. I've been looking for something to put on an overripe pumpkin that also froze. (Oops) Instant zoodles and tastes great with the curry sauce. FYI - 3 teaspoons = 1 tablespoon. Great recipe, thanks!

Your recipes stand their own ground and firmly, without any tweaks or substitutions. Hopefully they will have a copy in stock at B&N!! Sometimes they only have 1 copy in the store and it can be hard to spot, so don't hesitate to ask a salesperson there for help if you can't find it. :)

Hi! I'm from Italy and i find it hard to use maple syrup, since it isn't as easily found as in the US (i used to live there). Do you have a valid substitute, even if it changes the flavor, just to adjust the consistency and to be able to make the recipe?

Your kitchen has been warned, lol

In most recipes, maple syrup is used as an intense liquid sweetener. So anything similar could work very well, like honey, agave nectar, or whatever liquid sweetener that is acceptable to you that you can easily find in Italy.

I wanted to thank you for this delicious recipe. I was in search for a curry sauce for my husband. He been having issues with what food tastes like since his chemo/radiation. My husband did taste the complexity of the dip the sweetness and then when the curry snuck up on him:-) Thank you again.
