Ingredients
2 cup chopped cauliflower
2 cup chopped heirloom tomatoes
1 large sweet onion chopped
1 lage bunch of fresh parsley
½ cup fresh squeezed lemon juice
2 tablespoon extra virgin olive oil
2 clove garlic
Recipe Directions
Process the cauliflower in a food processes until it gets very fine. Place the cauliflower in a bowl. Chop the tomatoes or dice them and place them with the cauliflower. Chop the onion into small bits and add to the bowl. Place the bunch of parsely, stems and all, and the garlic cloves in the food processor and process until it is fine. Add the finely minced parsley and garlic in the bowl and add the oil and lemon juice. Mix all ingredients thoroughly and serve.

By humanimalMy mom makes this for me every weekend when I go back to college. The fine cauliflower takes the place of the soaked bulgur because I don’t eat grains. I love this stuff!!

Your mum seems really great to make this for you. What are you majoring in in college? I'm going to try this because I'm trying not to eat wheat.
