Yield
20-30 small balls
Ingredients
4 cups coconut flakes
½ cup agave nectar
1 tablespoon cinnamon powder
1 teaspoon cacao powder
Recipe Directions
1. In a food processor, grind down 3 1/2 cups of the coconut flakes for 1 minute or less. It’s easy to over-process, and the result should be small grains (not powdery sludge).
2. Hand mix in the agave.
3. Form 1” balls (add extra agave if it doesn’t hold together).
4. Grind the remaining 1/2 cup of coconut flakes with the cinnamon and cacao until well mixed and roll the balls to coat them. Refrigerate (best made under 76 F).
Rawvenge's Thoughts
By rawvengeOriginally I had these as “Irish Potatoes” that my Catholic friend’s mom made when we were young kids.
She used butter, powdered sugar, and other nastiness. This is a simpler, raw, and tastier version with less guilt in the savory obsession.
