Ingredients
First:
1 cup fresh sweet yellow corn
1/2 cup mung beans
1 tomato
1/2 red onion cut into thin slices the chop
1 cucumber medium -chop
2 med carrots- chop
Salsa:
1 tomato
1/2 sm spicy pepper of your choice
1/2 green pepper
1/2 red pepper
1 quarter yellow onion
1tsp agave syrup or to taste
1 bunch cilantro
1 clove garlic
salt to taste
spritz of lemon
Recipe Directions
Buy romaine or other stiff lettuce. Wash 4 large leaves. Put 2 leaves on each plate. Put 1 quarter of an avocado into each leaf.
1. In a large bowl mix "first" ingredients.
2. Make salsa chunky or puree.
3. Put equal amounts of veggies into each leaf. Sprinkle w/salt and pepper. Dribble 1 tsp of apple cider vinegar over each, add a few tbsp of salsa. Sprinkle generously with crushed pecans
4. Fold like a taco and enjoy!!

looks much better than the raw taco recipe I found in a cookbook. Can't wait to try!
