I heard of doing this with figs and covering with chocolate, but I only had dates and no chocolate. So I tried this instead and it is really good.

Recipe Directions

1. Mix honey with almond butter to sweeten.

2. Pit dates carefully, making sure to only make a small gap in dates.

3. Stuff with almond butter.

One of my favorite things in the world is splitting big Medjool dates in half, spreading cashew butter on each half, dusting it with cinnamon, and sometimes topping each half with half a walnut or pecan. To think that anything so decadent-tasting could be *good* for you! If you want to get extra fancy, after topping the date halves with nut butter, you can roll them in dried coconut and cinnamon. A real treat!

Its really good if you mix the almond butter with cocao nibs. Tastes like cookie dough.
