Serves 1 as a main meal, or 2 as a starter
Ingredients
2 medium tomatoes
2 small sticks of celery
1 large red bell pepper, cubed
1 chili pepper, deseeded and sliced
1½ tablespoon olive oil
1 clove garlic, minced
2 sprigs of fresh coriander (cilantro)
1 clove garlic, minced
2 teaspoon mixed dried herbs
1 pinch salt
1 clove garlic, minced
1 pinch pepper
1 medium cucumber, cubed
3 spring onions (scallions), sliced
Recipe Directions
Put everything in a blender and blend until smooth, then chill.
Garnish with sliced spring onion. For a chunky version, add a handful each of chopped cucumber, red pepper and courgette.
If you have a partner or family who eats SAD, you can use this soup as a base for a healthier alternative to ‘SAD’ chilli (add an extra chilli pepper, chopped veg and a large handful of soy, tofu or quinoa mince, 2 tsp yeast extract and heat through). Not quite raw, but is a good way of getting a loved one to eat healthier!
