This looks GREAT! Might be just what I need.... tired of buying raw bars to take with me when I'm going to be out all day. Will definitely be trying this soon!

Made these yesterday and let them set in the fridge overnight; just pulled one out to taste it and YUM! The description is bang-on right: chewy, crunchy, sweet but not overly sweet, quick.... I have to admit to a few modifications based on ingredients I did/did not have at the time: I swapped out the cranberries for goji berries and I didn't have any mesquite, lucuma or psyllium. Oh well, they still turned out FABULOUS! I love the very thing layer of cashew-macadamia nut butter on top. The bars are just a big hit, every which way. *Very* highly recommended! Thank you!!!

Cranberry-Raisin Crunchy Bars
These are really very good!
I used goji berries instead, since I had no cranberries. Also, due to not having any on hand, I did not use Lucama nor top with Cashew-macadamia butter. No pysllium either.
I'm glad I found something my kids like too. Thanks for the recipe!!

Thank you. I still have some goji berries in stock and it never ocurred to me trying them out with them. I assume they have to be soaked first, right? Just out of curiosity, if you did not use psyllium, which is the key ingredient to get them hard once cooled down at room temperature, what did you use and how in terms of consistency did they turned out. thanks.
