Ingredients
1 young thai coconut
2 cup frozen organic blueberries
Recipe Directions
Crack open coconut and add meat and water to vitamix blender. Add 2 cups frozen organic blueberries and blend until completely mixed. This will make a frozen purple smoothie that is delicious! Add more blueberries if needed to make the smoothie freeze up, and intensify the blueberry taste.

This recipe gave me an idea for my coconut water and coconut meat. I had some fozen blueberries, so perfect. I did add (very little) almond milk and cashews only because I was remembering a raw ice cream recipe while making this. But you can still taste the coconut and blueberries. It was good.
