I juiced beet greens once and they made my mouth and throat feel weird, my BF too. So I haven't had them since.

I juice them, add to green smoothies, and sometimes i do raw till dinner and i will satue or steam them with garlic and evoo. yummy
MARINATED GREENS
MARINADE
1/4 C apple cider vinegar
1/4 C sun-dried tomatoes, finely chopped
1/4 C scallions, white parts only, finely only
1 clove garlic, minced
1 t red pepper flakes
2 t sea salt, divided
1/2 t black pepper
1 bunch collard greens (or other greens)
1/8 C olive oil

I have some beet greens w/the stems and I was thinking of just making a green smoothie w/them but didn't know if I could eat the stems or not.
The stems are edible, I dice them into my salads or add to my smoothies.... Good luck with your adventures on being raw...
Well if you're talking about the stalk with the green leafy part on top of the beet, I can tell you they make great wraps. Mix some avocado w/ lime, garlic, onions, cut up some veggies to throw in there, carrots, peppers, cucumbers etc, and roll it up in a beet green. The stem is not too hard, so it works pretty well for a lettuce wrap. :)
