One of my favourite foods right now are chia seeds.
What is their claim to fame (besides being known for sprouting those famous “chia pets”)?
1. They become gelatinous, like tapioca, which makes them fun to use!
2. They are very filling.
3. They have an interesting texture which is a nice addition to the raw food lifestyle.
4. Chia seeds are an incredible superfood.
This raw chia tapioca pudding recipe is delicious and a great way to incorporate chia seeds into your diet.
Raw chia tapioca pudding recipe
Inspired by Elena’s Pantry
- 1 cup cashews
- 3 cups water
- 2 tablespoons agave nectar (or honey)
- 2 vanilla seeds (or 1 tablespoon pure vanilla extract)
- A tiny tiny tiny tiny splash of almond extract
- 1 teaspoon cinnamon
- pinch sea salt
- 1/4 cup chia seeds
Soak cashews for one hour. Drain and discard soaking water. Rinse.
Blend cashews and the three cups of water until nice and smooth.
Add everything else (except the chia seeds). Blend again.
Place the chia seeds in a bowl. Add the blended mixture. Stir thoroughly to ensure the chia seeds are well distributed.
Cover and refrigerate overnight.
Eat in the morning or for dessert in the evening!
This is a delicious raw chia tapioca pudding recipe. The chia seeds become gelatinous and really remind me of good old-fashioned tapioca. Mmm!

I am looking for Chia Pudding recipes. I have my own and wanted to see how other recipes looked. I teach raw living food classes. I have been eating raw living foods for 4 year.
I can’t help but wonder what this would be like dehydrated. I do that often, though.
I bet it would be delicious. BUT it is so @#$#$@%@#$%$ good raw that I can’t see myself having enough patience to dehydrate it, lol.
